Phở bò is more than a soup — it is a philosophy of patience and balance. The broth must be crystal-clear yet intensely flavored, the noodles silky and soft, and the toppings vibrant and fresh. Getting it right at home takes time, but the result is deeply rewarding.
Ingredients
For the Broth
- 2 kg beef bones (knuckle and marrow bones)
- 500 g beef brisket or chuck
- 1 large onion, halved
- 1 large knob of ginger (about 10 cm), halved lengthwise

- 1 tsp coriander seeds
- 1 tsp black peppercorns

Step-by-Step Method
- Blanch the bones: Cover beef bones with cold water, bring to a rolling boil, and cook for 10 minutes. Drain and rinse thoroughly under cold water. This step removes impurities and keeps your broth clear.

- Add the brisket: After the first 2 hours, add the brisket. Cook until tender (about 1.5 hours), then remove and slice thinly for toppings.
- Season the broth: Add fish sauce, rock sugar, and salt. Taste and adjust — the broth should be savory, lightly sweet, and deeply aromatic.
- Strain and serve: Strain the broth through a fine mesh sieve. Prepare noodles according to package instructions, place in bowls, top with sliced brisket and raw sirloin (it will cook in the hot broth), then ladle over the piping hot broth.
